What is Khao Soi?
Khao Soi is a coconut milk yellow curry with egg noodles, typically served with slow cooked chicken. It’s a specialty of Northern Thailand that’s become so iconic of Chiang Mai that many just called it “Chiang Mai noodles”! The broth is creamy and extremely savory. The chicken drumstick or thigh is slow cooked in broth to perfection. The meat should slide right off the bone with ease.
What ingredients go into this delicious curry soup you ask? Well, it starts off with a bowl of long cut egg noodles. Many Thai dishes use rice as a side, so it’s a nice change from the norm. Next comes the slow cooked chicken (or sometimes beef) and 1-2 large spoonfuls of the curry broth. The curry is topped with deep-fried noodles, creating a crispy contrast to the hearty egg noodles. Finally, khao soi is garnished with diced cilantro. On the side, you’ll get a portion of pickled greens, diced red onion and lime wedges. Glorious.
